Fried Rice

This is great as a side dish for all you carnivores or add meat to it. For you vegetarians/vegans, add the tofu or tempeh and you have a full meal from the wok. While you don't have to use a wok for this, it will have better flavor if you do use a well seasoned wok.

2 cups of precooked rice (brown for the really health conscious)
1 medium red onion - chopped
1 cup of broccoli - bite size pieces.
1 cup of Napa cabbage or bok choy - chopped.
1 cup shredded carrot (bite sized pieces would work too)
1 cup sliced mushrooms
1-2 Tsp Vegetable or Sesame oil
1-2 Tbs Soy sauce (vary to taste)
Optional
cubed meat, cubed tofu, cubed tempeh, summer squash, zucchini, most other vegies will work as well. I avoid the nightshades though, for some reason they aren't as good in this.

Using some of the oil, saute the onions. Then add in the mushrooms and cook them down a bit. If you're adding meat or soy substiture you will want to add that in with the mushroom step and not move on until it's cooked most fo the way through. Add in the broccoli and carrots and another vegetable you're adding (not the cabbage yet). When that all has been cooked but is till crispy, add in the rest of the oil, the rice, and the soy sauce. Stir and cook a bit. Add in the cabbage. It just needs a few more minutes and then you can serve.

Rice Pilaf #1

3.5 cups water
Vegie boulion cube (or better would be to use stock instead of water)
1 cup of rice
bring to a boil - then a simmer for 20 minutes (rice doubles in size)
Add in
1/3 cup of Orzo pasta
1/4 cup of sliced almonds
fresh chopped parsley
Salt and pepper

Stir until water is almost gone.
Cover and let dit for 10 minutes.
Eat.

Guacamole

3 ripe avacados
1/2 large red onion - finely chopped but not minced.
lime juice
2 roma tomatoes, hulled and chopped - discard the innards
sea salt/ fresh pepper

mash mix and eat.

Rice Pudding

This was good.

Leftover brown rice from last night - about 1 cup
soy milk to cover and swim - about 1-1.5 cups (I used green tea Pearl soy milk but I think it will work with regular soy milk.)
a shake of egg replacer (just for thicker more pudding like consistancy)
Over medium heat - bring to a boil
Reduce temp - add generous handfuls of walnuts and raisins.
Spice - cinnamon, nutmeg and ginger.

made 2 BIG servings

It was pretty good. It will make a great desert (which it just did) or a breakfast (which it will be tomorrow).

Next time I'm going to try it with Apple in there somewhere. I think Apples and walnuts work really well together.

Peach Muffins

1 egg
2 Cups wheat flour
1/2 cup white flour
4 tsp Baking Powder
2 Tbs Honey
1 can of peaches (light or no syrup)
1 tsp almond extract
1/2 cup Milk

Put the can of peaches in the blender (juice and all) - pulse a few times just to chop it up well. Then mix all ingredients together.

Bake at 400 degrees for 30-45 min (until done)

Notes: These came out pretty good. Sweet enough but not over bearing. I think this would be good with nuts in it. Next time.

Oat and wheat chocolate chip cookies - sugar free

Sounds kind of gross but the 5 year old ate them so they can't be all that bad. I like sugar fee items so the real test is a kid that likes her sugar, right?

Each time I make them, they seem to be a little different and I don't measure well.

2 cups wheat flour
2 cups rolled oats
1 tsp baking soda
1/2 cup margarine (melted)
1 cup applesauce
1/4 cup honey
2 eggs (but 1 works just as well, they're just heavier)
1/2 tsp Cinnamon

Optional:
Sugar or sugar substitute can be added for sweetness.
Dried Cranberries or Raisins
Malt Sweetened Chocolate Chips - or regular chocolate chips if you're so inclined.

Preheat oven to 400 degrees Farenheit
Mix it all up. If it's still too dry i will add some water to the mix just to get to stick together.
Plop spoon fulls of cookie onto a greased cookie sheet.
Bake 8-10 minutes - you don't want to over cook these. You just want them lightly browned on the bottom.

Tropical Granola

I had to keep myself from eating the whole batch of this raw.

3 Cups Rolled Oats
3/4 cup Oat Bran
1 cup of chopped Almonds
1 cup of coconut flakes
1/2 cup honey
6 ounces of Pineaple juice
Cooking spray

Spray the mixing bowl (easier to get it all out afterwards)
Spray the sheet pan

Mix all dry ingredients
Mix in pineapple juice
Mis in honey

Spread out onto a cookie sheet
Bake 300 degrees stirring to make sure it all gets toasty.

Seal in an air tight container - if there is any left.

Peanut Butter Cup Cheesecake

It's easier to make than it sounds.

2 8oz softened pkgs of cream cheese (low fat version is just as good)
1/2 cup of sugar
2 eggs
1 tsp Vanilla
3/4 Cup Peanut Butter**
8 oz of Semi sweet chocolate chips - melted
1 prepared Chocolate graham cracker crust.

Whip the cream cheese, vanilla and sugar together.
Whip in the 2 eggs.

Seperate into 2 halves
In one half whip in the Peanut Butter then pour into the prepared crust.
In the other half whip in the melted chocolate chips and pour on top of the Peanut butter in the crust.

Toss in the oven at 350 degrees for 40 minutes or until done (no more jiggly middle)

**I think 1/2 cup of peanut butter would work but I put in 1 whole cup because I'm a peanut butter addict.

Harvest Casserole and Garlic Cheese Rolls

Recipe:
Crust
1 stick of butter or margarine melted
1 Cup of crushed walnuts
1 Cup of flour
Mix this all together and spread in the bottom of your 9"x13" pan. Bake for 15 minutes in a 350 F oven. Then let it cool before you continue with the rest of the layers.

Layer 1
1 Cup Cool Whip
8 ounces of soft Cream Cheese
1 Cup Confectioners sugar
Mix this all up well and spread onto your cool crust

Layer 2
2 packages of Lemon Pudding
3 Cups of Milk
Mix well and put over layer 1
Put back in the fridge to set up

Spread a layer of cool whip on top and sprinkle with crushed walnuts.

VOILA!
It may seem like it takes a long time but really it doesn't and its sooooo good.
For those on a diabetic style diet you can omit the flour and it will come out ok, not as good as it is with four, but it's still really good. The confectioners sugar can be replaced with diet sugar or fructose. Of course you can get pudding and Cool whip that is sugar free. This realy is a desert than can be made for anyone. The Lemon pudding was replaced with chocolate once. I don't like chocolate that much but it can be done for those of you that need it.

Lemon Lush

Recipe:

1 stick of butter or margarine melted
1 Cup of crushed walnuts
1 Cup of flour
Mix this all together and spread in the bottom of your 9"x13" pan. Bake for 15 minutes in a 350 F oven. Then let it cool before you continue with the rest of the layers.
